Mooli’s would not have been possible without our head chef Raju Rawat, who has over 13 years of experience as a chef in Indian restaurants in Delhi and London. Having trained at India’s finest five star hotel chain (Oberoi, New Delhi), Raju went on to work at Benares, a Michelin starred restaurant in Mayfair.

It was Raju’s skills at making the perfect Roomali Roti (a true art form) that gave him the nick name mooli master. Raju was instrumental in making sure that we made fresh rotis at Mooli’s.

His creativity, quiet confidence and ability to craft the fruits of our searches and ideas made the five mooli’s possible. And let us not even get into the magic of his secret tomato chutney!
