Unspecified date, November 2003: Cold Oxford winter. Sam is missing good Indian food and the plot for Mooli’s is hatched.
2003-2006: Sam completes an MPhil. in the philosophy of law. Mathew works hard at being a City lawyer at Linklaters.
2006-2008: Sam joins BCG, learns Excel and still can’t believe there is no fresh Indian on-the-go option. Mathew joins UBS, but is yearning to make his own niche.
December 2007-January 2008: Sam travels in India seeking recipes from the kitchens of a Nawab in Lucknow, streets of Calcutta, Old Delhi, everywhere.
April 2008: Sam quits BCG with no backup. Starts to play poker to pay the rent and begins to work properly on Mooli's. Play it again Sam.
April-December 2008: Mathew starts to work with Sam while at UBS. Raju begins to get interested. His roomali roti is so good, we must do fresh bread.
01 November 2008: Finding Moolita.
27 November 2008: We even did some market research.
01 January 2009: Sam proclaims 2009 as year of the mooli.
30 January 2009: Mathew is unveiled as co-founder.
February 2009: Mathew travels to India to source family recipes from Kerala, Mumbai and Bangalore.
23 February 2009: Focus is everything. Indian going on Japanese.
26 February 2009: Mathew gets itchy feet at UBS. You’ve got to let me go.
05 March 2009: Get scientific. Being Heston Blumenthal.
20 March 2009: Chutneys take centre-stage. The Colour of Chutney.
22 March 2009: F&%K the Chicken Tikka.
03 April 2009: Mathew’s last day at UBS. Exactly one year after Sam’s last day at BCG. I can fly.
22 April 2009: Mooli’s are old Delhi meets Tokyo.
28 May 2009: We’re going to make fresh bread come what may. 110%.
23 June 2009: Mathew falls in love again.
01 July 2009: We got it. 50 Frith Street baby.
